Mango Panna Cotta



250g fresh mangoes pureed

¼ cup sugar

½ cup whole milk

1½ cups heavy cream

1½ teaspoons powdered gelatin

½ cup sugar

1 tsp vanilla

Small diced mango cubes, mint leaves to garnish


  1. Heat milk in a heavy pan. Add powdered gelatin and let the mixture rest for 5 minutes. Cook over medium heat for 3 minutes.
  2. Add vanilla, sugar and cream, and cook for 3 more minutes. Remove from heat. Once cooled, pour into desert glasses.
  3. Repeat the same procedure to make the top layer of the dessert, this time adding the pureed fruit to the cooked milk mixture.
  4. Chill for at least 5 hours until set. This dessert can be made up to 2 days ahead of serving.

Garnish with fresh mint leaves.
