250g fresh mangoes pureed
¼ cup sugar
½ cup whole milk
1½ cups heavy cream
1½ teaspoons powdered gelatin
½ cup sugar
1 tsp vanilla
Small diced mango cubes, mint leaves to garnish
- Heat milk in a heavy pan. Add powdered gelatin and let the mixture rest for 5 minutes. Cook over medium heat for 3 minutes.
- Add vanilla, sugar and cream, and cook for 3 more minutes. Remove from heat. Once cooled, pour into desert glasses.
- Repeat the same procedure to make the top layer of the dessert, this time adding the pureed fruit to the cooked milk mixture.
- Chill for at least 5 hours until set. This dessert can be made up to 2 days ahead of serving.
Garnish with fresh mint leaves.
